Mayonnaise Chicken

I share a quote today - the easiest way out when I am short of words. I don't think I need to put in any effort to explain that quote. Our life is largely determined by the way we do things and the way we respond to matters. The way we respond will make or break our situation. I guess many of us tend to learn this truth the hard way, but once you learn it, it becomes easier to tailor our responses for our good as well as the good of all around us. It takes a lot of trial and error, but the wisest thing to do is to carefully plan the response without getting hyped up about the stimulus!

Off to another chicken recipe today... I have featured so many chicken recipes over here, however I would love to say that this is one family favorite. I have made this a few times, you don't even need to make chapathis or parathas to have this. Just have a log of bread ready and you can see with what speed the curry vanishes, that much it pairs so well with bread, making it one of the best thing to make on a lazy day. Not only that, it cooks so fast that you don't need to spent much time in the kitchen. And - it tastes really good... Please do not miss the tempering if you decide to make this, it takes the curry to another level itself. This recipe is adapted from Chef Shireen Anwar's programme on Masala TV - I highly recommend trying this at least once... that good it is...

Mayonnaise Chicken
Serves 4


Ingredients:

750 gm chicken, cut into medium pcs
1/2 cup water
1/2 tsp chilli flakes
1/2 tsp black pepper
1/2 tsp salt
1 tsp ginger paste
1 tsp garlic paste
Juice of 1 lemon
1 tsp chilli sauce
2 tbsp ketchup
3 tbsp mayonnaise
1 blob butter
For tempering:
2 tbsp oil
1/4 tsp mustard seeds
2 strands curry leaves
2 dry red chillies

Method:

Cook the chicken with ingredients till lime juice till tender. Mix the mayonnaise, ketchup, chilli sauce and butter into a smooth paste. Pour into the chicken and cook for further 10 minutes.

Heat oil, splutter mustard seeds, fry the red chillies and curry leaves for a few seconds till done. Pour into the chicken and keep lid closed for 5 minutes. Serve warm.
