Spicy Chicken Pizza

There is a strength in these words... In-Sha'-Allah... and what does it mean? "If Allah Wills..." Every Muslim, when he commits to anything, even if it is a small matter, he has to ensure that he gives a commitment from his side along with these words. I know that people jokingly say that these words have a guarantee of six months. That is because of the wide spread misuse of it. If people use these words to let their discomfort or uneasiness known to do things, then they are mistaken. Either we say we do not intend to do it, or say we may or we would, with an "InShaAllah". Once I learned the strength of these two words, I never fail to use it. First of all, we are committing to the fact that we are powerless in the absence of the Almighty's support. How many things man has promised, but has not happened, because He has not willed it. After all, "with Him are the keys of the Unseen..." (Al Quran 6:59) Once we realize that, there lies our key to eternal peace and satisfaction, InShaAllah... :) This is a reminder to me to continuously strive to tell myself that nothing happens without His knowledge and what I am able to do is only because of His blessings and permission, and nothing else, Alhamdulillah... :)

Rarely the kids ask for a pizza unless otherwise reminded about it. A lazy Thursday it was, where I, as usual put out the normal "Ummi is tired after work!" excuse to two frowning faces, which made me feel sad. Yes, I did not have the energy to drive the car and take them out, but definitely did have some energy to make a decent pizza. To turn the frowns in the opposite direction, I asked them, "After ummi rests, can I make you a pizza?" And turn it did... yes, yes, please... :) In less than a couple of hours, this spicy chicken pizza was served hot to the kids and the men in the house to some "wah wah" comments. My tiredness was gone with those comments, but then it was already 11 pm and was time to put the kids to sleep, so no outing!!! Hehe... Off to this easy peasy pizza...

Spicy Chicken Pizza
Makes 1 large


Ingredients:

For dough:
1 1/2 cups all purpose flour
1 tsp instant yeast
1 tsp sugar
1/2 tsp salt
1/4 cup milk
Water as required

For chicken:
250 gm boneless chicken
1/2 tsp turmeric powder
1/2 tsp chilli powder
Salt to taste

For others:
1 70 gm sachet tomato sauce
1 tbsp oregano
1 small tomato, chopped
1 small onion, chopped
3 tbsp sliced olives
1 tbsp chilli flakes
200 gm mozzarella cheese

Method:

Combine all ingredients for dough. Add water little by little and make into a dough. Knead well. Set aside for an hour to double.

Cube the chicken into small pieces. Mix in the other ingredients in a pressure cooker and cook for 2 whistles.  Switch off and let the pressure go. Open the cooker and cook on high flame till the stock is dried and coat the chicken. Allow to cool.

Preheat oven to 200 degrees. Grease the pizza pan with olive oil.

Slowly spread the dough on the pan. Spread the tomato paste on top. Sprinkle the oregano, onions, tomatoes, olives, chicken and red chilli flakes. Finally sprinkle the mozarella cheese on top.

Bake in the oven for 25 minutes till done and the cheese is all melted. Slice and serve warm...
