Carrot Milkshake

I love the convenience of schedules posts. Being a hyper blogger, I cannot imagine leaving my blog to long periods of silence - as of now, that is! - and therefore, had scheduled last week's posts completely since I was aware I would be totally cut off, at least in a way where my access would be limited. As I had mentioned sometime back on the blog, finally we moved to our new apartment last week. It was an emotional moment, leaving behind so much in a flat that we have literally lived our whole life, but after 24 hours, I was mighty pleased to see that the kids and adults alike had adjusted into the new place much faster than I had expected, Alhamdulillah. In fact, even I have liked the fact that now I would be having a kitchen set as per my preference. Last week was a total lazy week, and it is going to be like that at least for the coming month, considering that there is still lots to do at home in terms of setting up the whole place and making it look like a "home"! Some of my concerns are slowly moving off place and things are falling into its place, which is such a relief. It is such a beautiful feeling to see how Allah has His way of revealing things in front of us. He gives us the people we need at the time we want, Alhamdulillah...

Today, let me go quickly into this yummy milkshake that I absolutely enjoy. I am not a carrot person. I cannot have it raw, though my kids fight over it till the last bit, though I just don't understand how they can do it. My inhibitions about carrot in a shake changed when I made this milkshake. I should have shared this one first, though it was the Carrot Oats Smoothie that bagged the first prize. Hehe... this milkshake is the best when served really cold. Whenever I am in a mood to make this, I pressure cook the carrots well in advance and once cooled, store them in the fridge till the time to be blitzed. Off to the way I make it...

Carrot Milkshake
Serves 2


Ingredients:

2 large carrots
1 cup water
1 cup cold milk
2 tbsp honey

Method:

Peel the carrots and chop them into large pieces. Pressure cook them with water for three whistles. Cool them completely.

Add the cooked carrots, water, milk and honey and blitz till done. Pour into glasses immediately and serve!

Notes:

Adding a scoop of vanilla ice-cream will elevate the taste to another level!
