Eggless Wholewheat Rose Cake

"Do not strut about in the land for you can neither cleave the earth nor attain the height of the mountains." (Surat Al Isra: 37)

This verse is one that I hold close to my heart. It is very easy in today's world to get carried away by what you do. We may act out of good will or good thought - or as many people say, purity of the heart but at a stage, there comes a time when we get a slight "feel good" factor in our hearts which makes us feel superior. It is the time for us to recognize that shaytaan is playing his game. Unfortunately, many of us don't realize. It is a really tough task to keep your thoughts clean, to keep your words clean and to keep your actions clean - unstained by pride. The Messenger of Allah (saws) said: ‘He who has in his heart the weight of a mustard seed of pride shall not enter Paradise.’ A person (amongst his hearers) said: ‘O Messenger of Allah (saws)! Verily a person loves that his dress should be fine, and his shoes should be fine.’ He (the Prophet (saws)) remarked: ‘Verily, Allah is Graceful and He loves Grace. Pride is disdaining the truth (out of self-conceit) and contempt for the people.’ We need to constantly keep whatever we do checked - if this mustard seed is present. As a human being, we all are bound to have that lapse but as much as we remind ourselves that we are nothing in front of the Almighty, it will make us difficult to feel the arrogant type of pride...

Another simple eggless bake coming your way... it is a simple cake, sweetened by condensed milk and given a lift by some rose essence. I loved the smell that was all over the kitchen while baking. The cake is on a denser side as it is 100% wholewheat flour, but nevertheless I loved it with my cup of tea. The kids were wary because of the density - so if you are baking for kids, I would suggest keeping it 50:50 of all purpose and wholewheat flour. Off to the way it is made...

Eggless Wholewheat Rose Cake
Makes a small loaf
Recipe loosely adapted from here


Ingredients:

1/2 cup (113 gm) butter, melted
1 cup condensed milk
1 1/2 cup wholewheat flour (aatta)
1 tsp baking powder
1/2 tsp baking soda
1/2 cup milk
1 tsp rose essence

Method:

Preheat oven to 180 degrees. Grease and flour a small loaf pan and set aside.

Seive the dry ingredients in a bowl. In another bowl, whisk the condensed milk and melted butter till well combined. Slowly add the dry ingredients into it. Then add the milk slowly to make the batter really thick. Finally add the rose essence and combine. Transfer to the loaf pan and flatten using a spatula.

Bake for 30 minutes or till skewer comes out clean. Cool in the pan for 15 minutes and then tip onto a cooling rack. Cool completely before slicing... Loved the aroma of this cake!
