Just like I mentioned in my Apricot Smoothie
post, I have been blitzing very often these days. First of all, it ensures that the fruits get over quicker without much spoilage and somehow, I find it the best way to have a filling breakfast on weekends or even a full dinner during the weekdays! Most of the days, I pack my dinner for having as lunch the next day in office, so in order to avoid any repeat of having the same food, I prefer to make a juice for myself. Since the kids are not very fond of juices, they don't even ask me anything when they hear the sound of the blender but the men, if around, would eagerly wait if I am ready to share some quantity with them. I normally have a big glass and then give them small portions for testing. When they give me a questioned look, I just ask them, "Then who will eat the dinner???" Mean me... hehe...
Since I have a lot of juice drafts staring at me, I thought - why not do a back-to-back 3-smoothie series? Going to the first one of the three - an absolute refresher! I used to be so wary of ginger in my drinks, but now I just love it. Remember the Watermelon Cooler
? Just as refreshing as that, is this combination of plain pineapple spiked with some ginger!
Pineapple Ginger Juice
6 thick slices of pineapple
1 small pc ginger, chopped or grated
1 1/2 cup cold water
2 tbsp sugar
Put the pineapple, ginger and 1/2 cup cold water. Blend till done. Add the remaining water and sugar and blend again till well combined. Strain the mixture if you don't like any bites - I normally don't strain! Serve immediately!
