Moroccan Carrot Salad

As I read this slide, it gives me an important lesson to learn. When we loose something, we tend to "live" in that lose for so long that we don't realise what we have gained during that time. Or even before or after that lose. Our mental capacity is limited to knowing what we can see or hear. Apart from that, we do not have the capability of understanding the wisdom behind the lose. After all, Allah himself says:

"But perhaps you hate a thing and it is good for you; and perhaps you love a thing and it is bad for you. And Allah Knows, while you know not." (Surah Al-Baqarah: part of verse 216)

It takes time and patience to learn to accept life as it comes by as well as the fact that nothing remains the same for too long. The way the world functions itself is an example for it. The weather, the sky, people around you all keep changing... the whole system is so dynamic that there is no reason to believe that things will not get better... 

Moving on to the recipe... I first saw this recipe in a recipe book called "Just 4 Ingredients", which has some very interesting recipes that can be made with four ingredients... just like the book name is! Actually, I was very sceptical about the recipe and as usual, sought the help of Google maama to help me out with the recipes. A mishmash of many that I saw and finally I made this salad. Really simple to put together, this will be something that carrot lovers will relish. Off to this simple salad...

Moroccan Carrot Salad
Serves 2


Ingredients:

3 large carrots, chopped into roundrels
2 garlic, crushed
3 tbsp olive oil
3 tbsp vinegar
3/4 tsp cumin powder
3/4 tsp paprika powder
Salt to taste
3 tbsp chopped mint leaves

Method:

Boil the carrot and garlic in water till soft but not mushy. Drain and set aside.

Combine ingredients from olive oil to salt in a bowl. Add the carrot-garlic and toss well to mix. Add in the mint leaves and toss. Serve immediately.
